**1.5 lbs. Red skin potatoes, halved

**1/2 head cabbage, sliced into chunks

**1 bulb fennel, thinly sliced

**14 ounces pork sausage

2 tbsp. olive oil

2 tsp. caraway seeds


  1. Preheat the oven to 400 degrees F.

  2. In a large bowl, combine the potatoes, cabbage, fennel and sausage. Drizzle the olive oil over the mixture and add the caraway seeds. Toss to combine completely.

  3. Lightly spray a rimmed baking sheet with cooking spray and transfer the mixture to the baking sheet, making sure everything is flat.

  4. Cook for 20 minutes, stir and then cook for an additional 20 minutes.
