escarole with chicken and beans

**4 mild italian chicken sausages, just the meat

**1 large yellow onion, chopped

**2 cloves of garlic, sliced

**5 cups chicken broth

**1 head of escarole, rinsed well

1 can of white beans, rinsed

salt and pepper


  1. Start by frying the sausage in a large pot. You don't need any oil as the sausage will fry in its own fat.

  2. Add onion and garlic and sauté until soft.

  3. Add the stock, escarole, and beans and let it simmer to the escarole wilts, takes about 4-5 minutes.

  4. Season with salt and pepper and serve.
