carrot ginger salad dressing

**2 medium carrots, peeled and chopped into 1-inch pieces

**2-inch piece of fresh ginger, peeled and roughly chopped

¼ cup rice or distilled white vinegar

1 tbsp. + 1 tsp. Low-sodium soy sauce

1 tbsp. + 1 tsp. Toasted sesame oil

2 tsp. Firmly packed light brown sugar

2 tsp. Hot water


  1. Place all the ingredients in a blender and blend on high speed until very smooth. Use immediately.
